Sommelier/wine responsible
Requirements:
Minimum 5 years of solid restaurant experience – and at least 2 years as a full timer
You have real experience working seriously with wine and are ready to take responsibility for a programme.
Maybe you’ve worked as a junior sommelier and feel ready to step up.
Maybe you’ve been part of a strong natural or grower-focused wine list and want more ownership.
You enjoy thinking about wine in context — with food, with season, with mood — but you also understand that a wine programme must be financially sustainable.
You are comfortable:
– Developing and adjusting a wine list with the seasons
– Working actively with food and wine pairings through our by the glass selection
– Structuring and maintaining the cellar
– Managing purchasing and supplier relationships
– Monitoring budgets and stock value
– Ensuring both by-the-glass and bottle margins meet agreed targets
You understand that creativity and financial discipline go hand in hand.

Service Manager
Requirements:
You care about how a room feels — and how it performs; you understand both hospitality and structure.
You are comfortable taking responsibility for:
– Leading daily service
– Supporting and developing the team
– Reading and understanding KPIs
– Following up on targets and performance
– Maintaining overview of labour and service flow
– Creating consistency in guest experience
You understand that good leadership is clarity, not control.
You are able to push standards and targets in a way that motivates rather than pressures.
In general, you are:
– Serious about your craft.
– Curious and grounded.
– Comfortable with both hospitality and numbers.
– Interested in building something long-term with a team — not just working shifts.
